Why Cinco de Mayo?

I've never understood the fascination with Americans celebrating Cinco de Mayo. Why do Americans celebrate a Mexican victory over France? It doesn't make any sense! How about putting as much emphasis over the battle of San Jacinto or the day Japan surrendered to the Allied Forces on September 2, 1945? It amazes me so many …
